The victim was riding a white Honda motorcycle along the A291 in Calcott, Sturry when it collided with a white Fiat 500 travelling towards Herne Bay at around 8am yesterday.
The driver of the Fiat allegedly fled the scene.
Police and paramedics were called to the scene, and the air ambulance landed nearby. The road was closed for more than two hours.
The biker, who is in his 40s, was flown to a London hospital, where he remains in a serious but stable condition.
A 40-year-old man from Herne Bay was arrested on suspicion of dangerous driving and failing to stop after a collision, and later released while the investigation continues.
Police now want to hear from anyone who saw the crash or the motorcycle or car beforehand.
