Queues formed at a new sushi and noodle restaurant which has filled a high street unit left empty for six years.
Japanese and Korean-inspired food chain Kokoro launched its branch in Ashford this afternoon, in a space most recently occupied by TUI.
The casual-dining spot on the corner of the high street and Bank Street is run by brothers Demand ‘Sulav’ Shrestha, 28, and Bibek Gautam, 33, and will also serve curries and rice dishes as well as gyozas and salads.
The opening is a boost for the town, which will see the nearby Park Mall opposite demolished to make way for a car park and, it is expected, flats.
Mr Shresta, who also operates Anytime Fitness in New Street and worked as a chartered accountant before starting his business ventures, says his love for healthy living inspired him to open the eatery.
He says: “It’s an interesting old building and we’re happy we’ve been able to restore it.
“In terms of the food, sushi is something I have always been passionate about as it is so healthy.
“You have to nail the timings and be quick at cooking it to get the best taste, and you won’t find food made 20 minutes before it’s bought at busy times.
“We had 20 people ask if we were open yet this morning while we were preparing everything.
“I’m very excited but also really focused on helping the community and helping the town centre as we are in a great location as well.”
Kokoro has 74 branches in the UK, including five others in Kent, and plans for the Ashford site were submitted to the borough council in October, and approved shortly before Christmas.
The 18th-century and Grade II-listed property has room for 20 diners and will be open from 11am- 9pm seven days a week, with takeaway options on the cards soon.
Travel companies Lunn Poly, Thomson and TUI have also been based at the town centre unit, with the latter departing in 2019.
