Olé! A Spanish and Latin American restaurant is coming to Rochester.

Rico Sabor is set to open at the beginning of June offering tapas,paella, fajitas and nachos.

The former Castle Food and Wine store in the High Street has undergone a complete refurbishment and will cater for up to 100 diners.

It is owned by Julian Ramirez who opened up an eatery of the same name in Gravesend two-and-half years ago.

Head chef Julian, who is half Spanish and half Columbian, promises a truly authentic menu in "rustic" surroundings.

Julian, 35, came to England from Valencia, a Spanish town famed for its tapas, and cultivated his culinary skills in restaurant kitchens in London.

The developers of the property met Julian by chance when they dined at his other restaurant based at The Old Town Hall in Gravesend High Street.

He said: "I came over to look around and liked it. I am getting to know it but I can see Rochester is a lovely town. I hope to be open in time for the Dickens Festival.

"There are several different types of restaurants here and I will be offering something different."

The house speciality is paella and a range of South American cocktails will be available from the bar.

Julian will be working beside other members of his family both in the kitchen and dining area.

Castle Food and Wine has moved a few doors along in the High Street.
