The Swan in West Malling is back in the black

A Michelin-listed restaurant group has returned to the black.

The Swan Collection, which runs the Swan Brasserie in West Malling and the Swan at the Globe in London, made a pre-tax profit of £2,970 after losses of £256,000 last year.

“All divisions of the business have shown growth in 2014 and this has left the company in a good financial position at the end of the year, in line with expectations,” said co-owner Christopher Diccon Wright.

Turnover grew to £7.5 million, up from £6.6 million, while its gross profit margin inched up to 45% according to its latest accounts. Gross profit grew to £3.3 million from just below £3 million a year earlier.

The firm, which employs about 165 people, said the Swan Brasserie in West Malling showed an improvement in both turnover and gross profit.

“With their extensive experience and knowledge we believe that Swan Brasserie will continue to grow from strength to strength,” said Mr Diccon Wright.

The Swan Collection’s pre-tax profits included goodwill amortisation on its consolidated accounts.

Mr Diccon Wright said: “All divisions showed an increase in sales despite the fierce competition in the marketplace and much credit is due to the management and staff for not only maintaining but also improving results.

“The group’s operating performance is affected by the pricing of its key inputs, which include food and beverage.

“Although beverage prices fluctuate less, the pricing of food can be quite volatile depending on seasonality

“Swan Collection continues to offset such adverse effects through its procurement process and long-term relationships with suppliers.

“The management closely monitors market trends and risks on an on-going basis.”
